We’re continuing our Irish Whiskey Cocktail Series by sharing another delicious Redbreast cocktail!
The Robin Song
50ml Redbreast 12
30ml Marsala Quince Syrup (ingredients and method below)
Twist of orange to garnish
MARSALA QUINCE SYRUP INGREDIENTS
250ml Marsala wine
100g caster sugar
2 twists of orange
MARSALA QUINCE SYRUP METHOD
Roughly chop 500g of quince and place it in a saucepan with 250ml Marsala wine, 100g of caster sugar and 100g honey.
Bring this mix to the boil and stir it to dissolve the sugar syrup.
Add two twists of orange and place a lid on the pan.
Simmer the mix for 2-3 hours.
Allow to cool before straining through a sieve. The syrup is now read to use.
Add both ingredients to a mixing glass or Boston tin filled with rock ice.
Now use the technique of throwing to both mix and chill the drink. This gives the cocktail a great mouth feel.
To serve pour over a hand-cut rock of ice in a rocks glass.
Garnish with a twist of orange.
