Check out Seamus Óg Birt’s concoction that he came up with for the Jameson Barrelman’s Homecoming competition! It’s inspired by his experience of leaning over a whiskey barrel in a warehouse in Midleton Distillery.
60ml Jameson Crested
25ml Pear & Vanilla Cordial
12.5ml Lemon Juice
Sherry and Spice Ice Cubes (method below)
Vanilla infused rum to spritz
Cinnamon stick to garnish
Mix all liquid ingredients in shaker over ice and strain into glass over Sherry and Spice Ice Cubes. Garnish with stick of cinnamon.
Spritz with flamed mist of vanilla pod infused with overproof rum.
Sherry and Spice Ice Cubes Method
Combine water, Oloroso sherry and spice syrup of cinnamon, clove, all-spice, nutmeg and grated walnut in ice cube tray and freeze.
