We’re continuing our Irish Whiskey Cocktail Series by sharing a delicious Redbreast cocktail!
50ml Redbreast 12
Lemon and piece of ginger to garnish
30ml Sherry Pineapple Syrup (recipe below)
Sherry Pineapple Syrup Recipe
500g peeled pineapple, chopped
150g caster sugar
Small piece of ginger (around thumbnail size)
250ml Oloroso Sherry
Zest of one lemon
Add all ingredients, except lemon zest, to pan, bring to boil and simmer for 1.5 hours with lid on.
Add lemon zest and allow to cool.
Strain through a fine sieve and bottle for use
Add Redbreast 12 and Sherry Pineapple Syrup to a mixing glass or Boston tin filled with rock ice.
Use the technique of throwing to both mix and chill your drink.
Serve over a hand-cut rock of ice in a rocks glass and garnish with a twist of lemon and a piece of ginger.
